(Polish: Stewed Sauerkraut with Mushrooms)
Ingredients:
1 oz. dried mushrooms or ¼ lb. fresh mushrooms
1 large onion, diced
2-1/2 T. butter or shortening
1-1/2 lbs. sauerkraut, rinsed & drained
1/3 c. water
2 T. flour
Salt & pepper
Directions:
Soak mushrooms in ½ cup warm water 1 hour. Sauté mushrooms & onion in butter in skillet 3 minutes. Add sauerkraut to mushrooms; cook & stir 10 minutes. Blend 1/3 cup water into flour. Mix with sauerkraut & simmer 15 minutes Season to taste with salt & pepper.
Additional directions:
Add caraway seed to taste & use 1 can cream of mushroom soup, 1 can golden cream of mushroom soup & 1 can of chicken broth. Cook & brown a link of fresh Kielbasa. Cut into small pieces & add. (About 6 servings)

(Polish Pickled Beets)
Ingredients:
3 c. sliced cooked or canned beets
1 T. grated fresh horseradish or 4 tsp. prepared horseradish
8 whole cloves or ½ tsp. caraway seed
2 c. vinegar
1 T. brown sugar
2 tsp. salt
Directions:
Layer beets in a glass or earthenware bowl, sprinkling layers with horseradish & cloves. Boil vinegar with sugar & salt 2 minutes. Pour over the beets. Cover; refrigerate 24 hours.
